Tim's Kitchen

Admittedly this is a very belated post, a visit made last October, but a post nonetheless! Happy New Year everybody - the holiday period was definitely enjoyable for me, being a glutton and all....hope all of yours was too!

Braised pomelo skin with shrimp roes ($80/pc)
Really good - not to get into the whole cooking process but the soaking of the skin to remove its bitterness alone takes around 3 days... since this is something I wouldn't bother doing, this is one dish I like ordering. The shrimp roes were fragrant too and seasoning was just right. 

Chilled marinated goose meat roll ($54)
Not a big fan of beancurd skin but I liked the filling - different textures and flavours made for a delicious bite.

Choice of 2 BBQ meat: BBQ pork and roasted crispy baby pork belly ($118)
BBQ pork (char siu) was mediocre at best, lacking both sweet and salty flavours, charred bits and wasn't quite tender enough; but that clear five-layered roasted pork belly was as glorious as last time.

Double-boiled winter melon soup with shrimps, yunnan ham, crab meat, fungus ($550/7 servings)
In line with the end-of-summer heat, we pre-ordered this bad boy to share. Luscious winter melon meat with fresh seafood and quality ham... lovely!
 
Deboned Eight Treasure Duck ($500)
This was fall-off-the-bone tender, one can easily cut through the meat with a spoon. Well-seasoned and something worth ordering in advance for.
Barley, chesnuts, green beans, lotus seeds, gingko nuts, egg yolk and various offal including liver.
From a previous visit: 
Two barbeque selection ($118) - BBQ pork and roasted baby pork belly
Oven-baked chicken with preserved vegetables wrapped in lotus leaf ($450)
This chicken was one of the better Chinese-style chicken dishes I've had. Very tender chicken with basically no fat between the skin and meat, and full-on flavours coming from the bird itself and saltiness from the preserved vegetables. I'll be ordering this again.
 
Tim's Kitchen deserves its popularity. I have yet to try the taro puff with sliced duck and the fried glutinous rice,  and will definitely be back for those!

MIST Rahmen


Mist Rahmen @ CWB

I finally got around to trying MIST a couple months ago and went back for a second visit (ordering the same soup-bases because they were so good)... Here, its all about the soup, consistent and impressive. Their noodles are made in-house and come in several thicknesses, but after sitting in the broth for some time, they quickly became too soft, so eat quick! I'd gladly visit MIST again - pricey, yes, but their soups have so much depth it more than justifies the price....!

Nanhai No. 1 - Contemporary Chinese eats

 Apologies for not having updated in a long time, but studies took over a lot of my time and I've been finding it hard to find time to update!

Nanhai No. 1 @ Isquare

Marinated jellyfish
 Quite thickly cut compared to other versions I've had. 

Marinated cucumbers

 Marinades for both starters were very well balanced. 

Double boiled soup
Contents from the soup - chicken feat, pork, gizzard and conch etc.
Braised soya chicken
 Very tender chicken in a balanced soy stew sauce. No complaints and perfect with plain rice. 

Stir-fried shrimps with jade melon, mushrooms and carrot.

Seasonal veg with shimeiji mushrooms
Mushrooms had a lovely 'wok hei' (smokiness from the heat of the wok) to it. Looks simple but so delicious.

Flash-fried garoupa fillets

Fried rice and seafood in lobster soup
One of the better versions I've had. The waiter puts the hot fried rice into the soup in front of us for a bit of theatre, and then after serving the rice retained a crispy-stickiness to it. Yum, and better than Cuisine Cuisine's.

Mandarin Grill




 It has been a while since I last posted.... so I have chosen to begin with my latest blog-worthy restaurant visit, the Mandarin Grill at the Mandarin Oriental Hotel. I've been dying to try this place for some time and am happy to report the food was no less than delectable and the meal in itself was  fun to watch it being presented and of course, eat!

After having lunch at Cafe Causette downstairs, I was back at Mandarin Oriental the same night to try Pierre for the first time. I had high hopes for tonight's dinner, for it did gain another michelin star this year...

Sun Tung Lok

 Sun Tung Lok @ Miramar, TST

I think Sun Tung Lok's status sort of shocked everyone, with its rise to 3 michelin stars quickly after its move to Kowloon side. This visit was a trip to try out their 'higher end' dim sum (i say this because dim sum in HK is often not very expensive, being a breakfast / brunch type food for many), and whilst overall quite good it wasn't exceptional or mind-blowing..

Caprice

My first meal out in HK of 2011 was at Caprice, as I left right after New Years to Seoul, where it was snowing and I had a red nose everyday from the cold.... Shopping isn't so fun when its -10degrees C! For lunch on this day, we were a three-some - mum, my brother and myself. We had a good time for the most part... but I'll let you decide whether it's worthy of a re-visit for lunch...

I was surprised when this was our amuse. I double-checked with the waitress and indeed it was our amuse for the day... Whilst it wasn't bad, it was very average and boring....not something which I expected...

"salted and unsalted butter"

once voted best condiments in HK on cnngo... this was plenty for the three of us to go with the bread basket the waiters came around with... the salted was quite yumm but I honestly don't think I am of the caliber to distinguish salted butter from Brittany and other salted French butters... 

As for the bread, I had a rye and brioche roll for a contrast. Both were good but I wish they were warm.

This was mum's choice. According to her it was good.

"Alaskan King Crab, Shellfish Jelly and Mango Mousse" 

I chose this as my appetizer, and it was delicious despite the hiccup I experienced - the first one had a tiny tiny bug on a micro-green leaf, and I notified a waiter who kindly offered to exchange it for me. Ten seconds later another waiter ]in black suit] came back and said that the black thing was a seed. Trust me, it was not. I had shown it to my brother next to me prior to sending the dish back and we had both seen the bug with its antlers and all! To have a bug is one thing, to have a waiter try to defend the goodwill of the restaurant by lying denying the truth is another which I couldn't accept...

So back to the actual dish - I really liked the combination of flavours - from the light and sweet mango mousse to the fresh crab meat, and jelly which was studded with diced sweet bell peppers. If the triangle crips could've been more crispy/brittle, then for me this would've hit a 9 or 10!

"Scallops a la plancha"
with a watercress custard and green lentils

this scallop dish was deceptively simple in appearance but really very tasty. the four scallops could have been juicier and fatter like the ones you often find from Japanese restaurants, but these were perfectly seared a la plancha (i.e. hot plate). the pool of sauce which the green lentils was stewed in was not very appealing in colour (greenish-brown?!) but certainly very tasty, with Indian/SE Asian spices which I definitely did not expect! The watercress custard was very green and tasted green too, could have used a bit of seasoning, but quite enjoyable with the lentil stew because of its panna cotta-like consistency... 

"Coated Veal Head"
with Pommery breadcrumbs, Vegetable Meli-Melo and Tartar Sauce

my brother wanted to be adventurous and went ahead and ordered this dish, but I had my doubts as to how they were going to make the head of a baby cow tasty...
The brown cake in the photo is a deep-fried 'cake' of shredded meat (which I assume is from the head of the animal), and the outer layer was perfectly thin and crisp, not heavy despite its appearance. I thought the cake was very well seasoned and the meat/fat inside incredibly tender, but the creamy and slightly tangy tartar sauce added another layer of flavour. My brother (who hates most vegetables save for choy-sum) happily ate all the vegetables on top too (of course, with some help from the yummy house-made tartar sauce).      

"Teriyaki Wild Pollack" 
with Creamy Basmati Rice and Shiitake Mushroom

This was mum's choice, and I had a bit of the perfectly seared pollack - not my first choice of fish because it is way too lean which means the texture isn't comparable to cod or salmon when roasted / pan-fried etc., Anyway, I felt that this dish was definitely lacking in....sodium! The name was also slightly deceiving... 'Teriyaki' denotes a sweet soy marinade-coated protein, but this had drops of the sauce on the side which for aesthetic purposes was excellent, but not such a big hit for me on flavour.

"Desserts" is what i read on the menu before anything else... so I was waiting for this course with excitement. There were six selections for the day...and our selections (all) can be seen below.

"petit fours" 
marshmallow, pineapple financier, caramel candy, chocolate with cranberry filling
I liked the textures of the marshmallow but it was too sweet, and the chocolate with the tart cranberry reduction was definitely my favourite. 

my plate 
Blueberry macaron, berries tart, blueberry mille-feuille
the macaron was impeccable - it was larger than your average candy but was so yum - crisp exterior, chewy interior, had a foot and the chocolate and blueberry filling inside was a perfect balance of sweetness. 
the berries tart was fresh, and the base is buttery and shortbread-like
the mille-feulle had a crisp pastry, but i didn't really like the filling - a layer of blueberry, mascarpone cream and white chocolate - i'd be happy with a good creme patissiere and fresh berries!

yuzu creme with a diced mango crumble - incredibly sour but quite light and nice if you like yuzu.
Chocolate cake - had liquor and was a tad too dry, we left this. 
Coffee eclair was quite enjoyable. There was a coffee mousse on top, a layer of tempered chocolate, caramel mousse on pastry which could've been slightly less soggy if I am to be picky... 

"cappuccino"
wasn't a bad cuppa, but simply not near Mandarin Oriental's. 

Save for the 'hiccup' I experienced during the appetizer course - which I can understand because a bug in Caprice's food would be appalling news, but it did happen, and I didn't understand why they couldn't just accept that it was a bug -I was pretty satisfied with lunch here, and left feeling content (thanks to the exceptional macaron!). I would come back again I guess, just not running back...

♥ Robuchon

In celebration of an early birthday, I chose Robuchon for our family lunch. We were seated at the centre of the bar, so I had a full view of the chefs working the lunch hour =) 

 Whilst mum and dad chose the three-course lunch set, the tasting menu was calling out to me... 

bread basket, one of these between two.
brioche was my favourite, and the bacon bits-studded roll came in second. 

l'amuse bouche - "bacon royale" 
bacon mousse, some brown bacon sauce, bacon foam and a toast with bacon fat on the tip. 
sinful but every bite was worth it! 

mum's starter of "l'encornet"
sautéed calamari with eggplant caviar, vanilla and tomato sauce
egg plant was soft and luscious, calamari was slightly chewy and seasoned very well

dad's starter of "le saumon"
marinated salmon with truffle oil, "Ratte" potato vinaigrette and curry tacos
didn't get to try this as dad gobbled it very quickly! 

first dish from tasting menu - "le caviar osciètre"
caviar, lobster jelly, crab meat on bottom.
this was one of my favourites, from the presentation to the textures and flavours of this dish.

second dish -"la langoustine"
crispy langoustine papillote with basil sauce
this dish was a kind replacement of the foie gras which I am against eating, and this simple langoustine (mini lobster if you will) wrapped in thin filo and deep fried was so good, easily another one of my favourites. the langoustine was so fresh and had so much of its natural crustacean flavours retained that I don't think I've ever had it this good....!

third dish -"l'oursin"
sea urchin jelly/cream on bottom, three pieces of sea urchin topped with edible gold, wasabi emulsion
to be honest I have never really loved sea urchin, but this dish was pretty awesome. the cream/jelly on the bottom carried a light sea urchin flavour, topped with the really fresh sea urchin and the emulsion which was had a hint of wasabi only, never too pungent.

fourth dish -"le homard"
maine lobster, carmelized cauliflower puree, tamarind cream sauce
lobster was fresh and juicy, but incomparable to the langoustine above, the cauliflower puree was light and smooth, and  went well with the tamarind scented sauce. 

fifth dish -"le bar"
salmon roe sitting on a piece of sea bass in a pool of herb sauce. 
the sea bass skin would've been better if crispy, but the whole thing was definitely good eaten together. the fillet was slightly over-cooked, but the caviar and herb sauce rescued the dish: I love herbs so naturally I loved the sauce, and the salmon roe bursting in the mouth with the sea bass provided the lean fish with some moisture.... my brother thought it was pretty epic when all three components were eaten together!

sixth dish -"la piece de boeuf"
japanese beef seared to medium with its natural jus.
very simple, but the fatty beef was not tender enough for me despite being bloody in the centre . this was my least favourite savoury dish! 

the beef came with a side of fried potatoes was surprisingly good, even for non-potato-eaters like my brother and I. these were fried in butter and coated with salt and herbs which made them flavourful, juicy, and most importantly were cooked till tender. 

mom's main - "le pigeonneau"
roasted bresse pigeon, turnip rounds with shredded turnip, crunchy peanuts and honey-orange sauce. 
The pigeon is not well-done, so if you don't want it red you must tell the waiters first. the meat was wonderfully tender, only slightly gamey in a good way. turnips were well-cooked and tasty too. Ma loved this! 

dad's main - "le bar
seared seabass, caramelized shallots, red wine vinegar sauce 
this time I remembered to ask dad for a bite, and the skin was wonderfully crispy (my sea bass should have been like this!) and the fish was cooked perfectly, so it was tender. The sauce was slightly sour and was sooo yummy with the shallots and fish -  I really do love vinegar... 

dad's sea bass came with a side of Robuchon's famous mash. This little pot of potatoes was sooo rich, smooth and creamy at the same time both my brother and I, despite normally hating potatoes found ourselves finishing half the thing for dad. 

after savouries... we were ready for dessert!

First dessert - "la perle"
green apple flavoured sugar, diced green apples and cream filling, salted caramel cream dots
genius - we loved the presentation and the green apples inside were the freshest I've had, and nothing was too sweet despite the ball being made of sugar. 

second dessert - "la symphonee chocolatee"
white circle on top is an edible white chocolate, chocolate mousse on top of a prune/date compote. 
chocolate mousse was actually two layers - a dark richer thicker mousse and a lighter chocolate mousse on top. the complete opposite of the"la perle", this dessert is lovely rich and definitely for chocolate-lovers. however as I'm no fan dates/prune I would've preferred another fruit, maybe a tart berry?? 

mum's dessert - "la figue"
fresh figs, crumble, vanilla ice cream, crispy wafer chips which are I think passionfruit-flavoured
this dessert is not exactly like the menu, but I think this one was better than the menu-stated version with the almond cream.. 
the figs and crumble are warm, whilst the ice cream cold. figs were softened and yummy, crumble was light yet buttery. The ice cream was speckled with vanilla pods, and really good. the wafer provided a crispy texture and a tangy contrast to the ice cream and fig.


dad's dessert - "tiramisu"

this version of tiramisu was wonderfully light and was definitely my favourite out of the desserts we had. coffee and chocolate are both my favourite foods and flavours, so this was heaven!

by the time desserts came the kitchen had packed - even the sous chefs had disappeared, and so i guess they forgot our petit fours.... a little unforgivable but I was satisfed with our desserts anyway... now for our cuppa to end our meal: 

foam was lacking and not done very well, drink was reasonable but no where near mandarin oriental's!
