La Parole

La Parole @ The Pemberton


La Parole had opened at The Pemberton not long ago and at first I have to say I had my doubts given the choice of  restaurants in the same building. The owner of La Parole is the same as Leonidas Chocolate stores around town, as well as the newly opened Shou Zen on the 7th floor upstairs.


For dinner they only do sets, there's a 3-course ($380), 4-course ($428), or tasting menu of 6-courses ($600). 
As for choices, there were 6 appetizers, a daily soup, 7 main courses and 6 desserts to pick from.

Crusty baguette and walnut raisin brown bread were both quite addictive, although not made in-house but sourced from elsewhere.

Sweet canteloupe with parma ham - a no-brainer but it was also an appetiser (although more dressed up) option.
"Foie Gras, many ways"
I forget the exact details, but the centre was a pan-fried piece of foie, on the right was a mousse int he spoon, and on the left was a crouton topped with a pate of foie. 
"Trio of grilled scallops"
Whilst the scallops were perfectly cooked and the green salt imparted good flavour I thought the presentation fell short. The apple batons, carrot sticks and sliced bell peppers looked simply messy, although gave a good crunch in contrast to the scallops. 
Soup of the day: "Lobster bisque"
This lobster bisque was packed with a punch of lobster flavours and was uniquely light in texture (smooth but not rich / creamy like when lots of cream is used). If I had known the soup was so darn good I would've happily skipped the appetiser and went with the soup course instead. 
"Pan-fried white cod with mixed beans", light green curry sauce
One of the options for the main courses was fish - tonight the fish was a white cod, pan-fried with mixed green beans and snap peas in a light green curry sauce. This fish severely lacked in salt, and the green curry sauce could've been a touch stronger, though the elements were all very well-cooked. 
"Homemade pasta, scallops and clams with mussel emulsion"
The pasta was way too soft for my liking. Aside from the pasta, the seafood and cream sauce that came with was delicious. 
"King prawns, pesto pasta"
Probably my favourite of the three mains we sampled. The pesto was  great and although once again the pasta was too soft the doneness of the prawns were perfect. 

"strawberry pancake with homemade strawberry jam", vanilla ice cream
Desserts here are prepared by the same Chef Taluy. We were recommended this strawberry pancake by our super-friendly waitress, and we weren't disappointed. The pancake was thin, soft, but with a slight crunch on the outside (i suspect it was finished in the oven) and inside was diced strawberry pieces in a strawberry jam. Served on the side was some crumble and vanilla ice cream. 
"banana and chocolate crumble"
Bananas with a chocolate sauce, and topped with a cookie-like crumble.  Whilst I would've preferred the more American crumble toppings of flour, oats, butter and sugar, this was not too bad, just not very creative nor enticing.
"chocolate souffle - two recipes and mango mousse"
On the left is a molten chocolate cake, in the centre is a cold mango mousse, and on the left a souffle. At first I found the mango mousse quite odd to be in this dish, but I realise it is there to help cut the richness of the two super-chocolatey desserts. The chocolate items were bitter-sweet - how I like my chocolates so I was definitely a fan! 
"hot chocolate"
With the set dinner comes a drink - your choice of tea, coffee, or chocolate drink made with their own Leonidas chocolate. This hot version was quite light (great for after 3 or 4 courses) - though I personally could've taken something more darker and more chocolatey.
