MIST Rahmen

I finally got around to trying MIST a couple months ago and went back for a second visit (ordering the same soup-bases because they were so good)... Here, its all about the soup, consistent and impressive. Their noodles are made in-house and come in several thicknesses, but after sitting in the broth for some time, they quickly became too soft, so eat quick! I'd gladly visit MIST again - pricey, yes, but their soups have so much depth it more than justifies the price....!

Amuse bouche - very Italian flavour-wise with the pesto..

Ume Shio ($130) + Egg ($20)
Soy infused soft boiled egg
 This was served with their house-made no. 26 noodles, quite thin, but not as thin as the one below with the tonkotsu broth. The more yellowish noodles became soft quite quickly, which was slightly disappointing. However the soup was clearly the star - rich, nicely seasoned and the broth so light yet satisfying. I'm not sure I liked biting into the plum but in the broth it gave a salty-sour taste which I liked... This was almost 'comforting' to eat!

Tonkotsu ($135)
 Noodles for the tonkatsu were a little 'harder' and retained a bite till the end despite being thinner... Again however, the broth was to die for - when served we inhaled the smells of sesame oil and after a sip of the soup there was a distinct charred/roasted pork flavour that I haven't come across before. There was some chili bean sprouts as well which I didn't think was needed given the soup itself had full intensity of pork goodness and was wonderfully delicious. 

Sea urchin ramen "sushi" ($160)
Ramen for the sushi was cold and deliciously springy; uni was fresh, slightly briny but mostly sweet.

Ramen fanatics should really check this place out - just remember to make reservations in advance!
